Since 1871, Asabiraki has been dedicated to crafting premium sake in Morioka, Iwate guided by the traditions of the Nanbu Toji. Blessed with pure water, premium sake rice, and an ideal brewing climate, we continue to produce sake that is recognized throughout Japan for its exceptional quality.

IWATE Pref. is one of Japan’s premier sake-producing regions, renowned for its exceptional natural environment and centuries-old brewing tradition.

The region is the birthplace of the Nanbu Toji, one of Japan’s most respected guilds of master sake brewers, whose craftsmanship has been refined and passed down through generations.

An Ideal Climate for Sake Brewing

Morioka experiences long, cold winters, with daytime temperatures frequently staying below freezing. Combined with relatively light snowfall, the region’s cold, dry climate creates ideal conditions for cultivating premium koji and shubo (the yeast starter), providing the perfect environment for crafting exceptional sake.

Junmai Daiginjo Gokujo Kyokuosen - Yamada Nishiki

Polished to 40% from premium Yamadanishiki rice—widely regarded as the finest sake rice—this Junmai Daiginjo is brewed using the craftsmanship of the Nanbu Toji master brewers and the renowned Daiji Spring Water, selected as one of Japan’s “Top 100 Heisei Famous Waters.”
The soft water of Daiji Spring creates an exceptionally smooth mouthfeel, while elegant floral aromas and remarkable clarity unfold gracefully on the palate.
Enjoy the refined balance of fragrance and flavor, followed by a delicate and lingering finish.

Junmai Ginjo Super Dry Ultra-Suijin

A premium, limited-brew edition of “Junmai Super Dry Suijin”, this junmai ginjo delivers an exceptionally dry and crisp taste profile. Carefully crafted in the ginjo style, it offers a remarkably clean finish, making it an excellent choice as a food-pairing sake.

Junmai Super Dry Suijin

Junmai Super Dry Suijin

While sake with a Sake Meter Value (SMV) of around +5 is generally considered dry, Junmai Super Dry Suijin achieves an impressive +10 dryness while still retaining the character of a pure rice sake.
More than simply dry, it is crafted as a flavorful “dry junmai” that preserves the natural richness and umami of the rice. Its balanced yet crisp profile makes it an excellent companion to a wide variety of dishes.

Junmai Ginjo Yumebikari

A long-selling sake from Iwate, brewed with carefully cultivated locally grown rice. It features a gentle yet fruity aroma and a soft, slightly sweet flavor profile.
We are honored that Yumeakari received the Gold Prize in the Ginjo Category at the U.S. National Sake Appraisal 2018, the longest-running sake competition outside Japan.

Honjozo Nama-Chozo Sake

Honjozo Nama-Chozo Sake

Carefully stored at 0℃(32℉) in the brewery’s refrigerated cellar and bottled to preserve its fresh character, this Honjozo Nama-Chozo offers a lively and refined drinking experience.
Its versatility with food is one of its greatest charms, making it one of Asabiraki’s longtime best-selling sakes.

Recommended Pairings:
Simmered bamboo shoots, stuffed cabbage rolls, and other delicately seasoned dishes.
